Artichoke Puffs

Excellent party platter. We have used this recipe many many times over the years and never had to take any home. Be careful, they're very addictive.

Ingredients

  • 3/4 cup cheddar cheese, grated
  • 1/2 cup mayonnaise
  • 1/2 teaspoon onion salt
  • 1 can artichoke hearts, drained and cut into quarters
  • 30 melba rounds

Directions

Add first three ingredients. Place one piece of artichoke heart on the melba round. Top each canape with a spoonful of the mixture. Place under broiler until the cheese puffs.


Lessons learned: Do not try to use regular crackers, because the juice from the artichokes will soak in and make them a mess - use melbas. It's easy to overdo the onion salt. Half cheddar and half mozzarella is a good cheese substitution.
