OATMEAL CHOCOLATE CHIP COOKIES

Cream:            2 sticks BUTTER
                        1 cup brown sugar (firmly packed)
                        1 cup white sugar

Add:                2 eggs
                        2 tsp vanilla
                        2 tbsp milk
                        (3 tbsp apple sauce) = optional

Beat until fluffy.  (The Kitchen Aid works wonders here.)

Add:                2 cups all purpose flour
                        1 tsp baking soda
                        1 tsp baking powder
                        1 tsp salt
                        1 tsp cinnamon
                        You can also add cocoa powder for a chocolate dough.
                         A few to several HEAPING  teaspoons works for me.

Add:                        3 cups oatmeal. (I like the regular oats, though the quick stuff works) 

Add:                        At least two bags of chocolate chips  (24 oz)

or:                        A few cups of raisins instead of chips makes for a good batch too

350 degrees for 10-12 minutes.

let cool on the cookie sheet for 10 or so minutes before taking them off to cool.  (or eat)


SNICKERDOODLE COOKIES

Cream:             3 sticks BUTTER
                        1 1/2 cup brown sugar
                        3/4 cup white sugar

Add:                3 eggs
                        3 tsp vanilla

Beat until fluffy.  (The Kitchen Aid works wonders here.)

Add:                3 3/4 cups all purpose flour
                        3/4 tsp baking soda
                        3/8 tsp salt

Refrigerate dough helps a lot.  When cool, roll dough balls as desired. (#40 scoop)  Roll balls in mixture of 3 parts sugar to 1 part cinnamon.

Bake at 300 degrees for 20 minutes or so.

let cool on the cookie sheet for 10 or so minutes before taking them off to cool.  (or eat)

Options:  PECAN SANDIES: Add pecans to dough and then roll in granulated sugar before baking

            SUGAR COOKIES:  Just roll dough in sugar
